Mirko’s strong commitment to sustainability shines through in several key features. First, he focuses on foraging for wild ingredients such as herbs, flowers, shoots, algae, lichens, mosses, berries, and pine cones. Additionally, ÀBITAT produces fermented ingredients from food waste and flame-cooked all their dishes.
