This day also offers the perfect opportunity to highlight an incredible program I experienced last week at JW Marriott Phuket Resort & Spa. On November 29, I attended their Farm-to-Fork Charity Dinner, which showcased innovative ways to tackle food waste and promote sustainable dining. Beyond serving delicious, locally sourced dishes, the dinner highlighted the hotel’s commitment to reducing food waste by 50% by 2025—a goal that aligns beautifully with Phuket’s broader sustainability efforts.

Tackling Food Waste in Phuket

Last week, I attended an inspiring charity dinner at JW Marriott Phuket Resort & Spa in Mai Khao, led by Chef Brian Moore. The dinner highlighted Phuket’s growing waste problem—over 1,000 tonnes daily, with food waste making up 60% of it. This is a pressing issue, especially during the high season when waste surges.

 

The Phuket government and Thai authorities are tackling this challenge head-on. From January to March 2025, pilot projects in three areas will explore innovative solutions to reduce food waste. Initiatives like JW Marriott’s food waste reduction campaign are at the heart of this movement.

 

Hotels, Resorts and Restaurants are now adopting advanced AI technology to optimize food purchasing based on guest behavior and occupancy. LightBlue Consulting, a leader in food waste prevention in Thailand, supports these efforts, ensuring measurable impact.

Sustainable Dining at JW Marriott Phuket

The charity dinner, priced at THB 3,500++ with wine pairing, offered a perfect blend of gastronomy and purpose. Starting with cocktails and hors d’oeuvres, we mingled with chefs and staff, learning about their sustainability efforts.

 

At the charity dinner, guests were treated to a five-course meal with wine pairing, emphasizing sustainable and locally sourced ingredients:

 

  • Free-range eggs
  • Sustainably farmed or line-caught fish
  • Circular dishes, such as pasta and bread made from breakfast leftovers

This evening wasn’t just about fine dining—it was a call to action for travelers to reduce their carbon footprint and support sustainable tourism.

 

The goal? To cut food waste by 50% by 2025. This ambitious target relies not only on the hotel’s operations but also on guests making conscious choices, such as minimizing buffet waste.

Green Practices and Conservation

Beyond dining, JW Marriott Phuket is a hub for eco-conscious initiatives:

 

  • They grow their own herbs, vegetables, and fruits, and even raise chickens for fresh eggs.
