Last Saturday’s CHEFS ON PAROLE Episode 4 “Fancy That” at Mrs. B wasn’t just a dinner; it was a spectacular culinary show! Five seriously talented chefs – Charlie from Aulis, Yannick from the upcoming Omemo, Satya from Outrigger, Ramon from Fira, and Mrs. B’s own resident chef Alex – each whipped up dishes that redefined “fancy” in their own brilliant ways. My taste buds are still doing a happy dance!

Chef Yannick’s Confit Salmon Trout (THB 350+)

Chef Yannick’s confit salmon trout (THB 350+) with green curry hollandaise was a visual and gustatory masterpiece. TThat green curry hollandaise? Pure genius! It was cut with fresh greens, giving it this gorgeous chartreuse green hue that created a beautiful backdrop for the perfectly pink trout. So elegant, so sophisticated, and honestly, it looked deceptively simple. I might just try to replicate this beauty at home, wish me luck!

Chef Satya’s Phi Phi Crab Cake (THB 310+)

Chef Satya’s Phi Phi crab cake (THB 310+) struck a nostalgic chord as I haved lived in Maryland two decades ago, I know Chesapeake crab cakes intimately. This Thai-twisted version honored the American brasserie classic beautifully while embracing local flavors. It was a fun, playful dish with a sweet little message from the mini fried crab on top!

Chef Ramon’s Scallop Tiradito (THB 300+)

Chef Ramon’s scallop tiradito (THB 300+) a stunning edible ode to the sea, The delicate scallops dancing with blue swimmer crab and burnt cauliflower in perfect harmony. Seriously, one portion just wasn’t enough; I could have devoured five!

Chef Charlie’s Boeuf sur Pain Anglais (THB 480+)

But then there was Chef Charlie’s Boeuf sur Pain Anglais (THB 480+). Aww! That first bite was like falling in love all over again. Beef chin, wasabi, toasted crumpet, and bone marrow created this utterly gourmand experience that made me want to return for more, and more, and more. It was truly fabulous.

A Sweet Ending

Chef Charlie’s Riz au Lait (THB 280+)

Dessert-wise, Charlie struck a chord with his Riz au Lait (THB 280+). As a French kid, this was my go-to comfort dessert when I was sick, made by my mom. Tonight, elevated with Khao Yai vanilla, hom mali rice, and blackberry, it wasn’t just a dessert; it was a warm hug, a reminder of home, and a dish that made me smile. Thank you for bringing back those memories, Chef!

Chef Yannick’s à la Minute Banana Soufflé (THB 380+)

The evening’s grand finale and undeniable technical triumph was Chef Yannick’s à la minute banana soufflé  (THB 380+). This notoriously difficult French classic was executed flawlessly, served with coconut ice cream, Kalvari Kristal Caviar, and a luscious caramel. Another childhood memory, beautifully brought to life and showcasing incredible skill. Yummy!

And The Verdict Is...

While Charlie captured hearts with comfort, tonight truly belonged to fancy, and Chef Yannick rightfully claimed victory for delivering such an unforgettable “Fancy That” experience.
