Chef Tammasak “Noi” Chootong has expanded his culinary universe with SUAY Alchemy, his newest venture in Srisuthon. The space brings several of his concepts under one roof: the casual all-day cafe Daily Dose with a playful house-made ramen unique twist and small-batch bakery, alongside the refined energy of SUAY. Unlike the Cherngtalay branch, this location experiments with multiple stations, each delivering a distinct dining experience.
The design follows the same spirit of reinvention. Sleek, contemporary and deliberately eclectic, it feels more like a venue in Singapore, London or Hong Kong than a typical Phuket dining room. It’s a confident sign of how the island’s dining landscape keeps evolving.

The Mood
Chef Noi has always understood balance not only on the palate but in the atmosphere he builds around a meal. SUAY Alchemy pushes that instinct further with a dynamic layout of bars under one roof. You might open with tapas, shift to the hand-roll counter for a burst of precision and freshness, then surrender to the smoky pull of the charcoal grill. It’s an effortless progression that suits any appetite, any mood, any stage of your evening.
From briny oysters brightened with sharp condiments to octopus tinted with turmeric and char, the space encourages exploration. It feels like a playground designed for adults: a place where you’re invited to wander, veer off-course and indulge.
The interior strikes a polished, contemporary tone without the stiffness that plagues many fine-dining rooms. Staff remain warm and genuinely welcoming, yet the service stays measured and discreet, a clean balance of professionalism and ease.

The Food
We were fortunate to preview the à la carte menu ahead of its official launch and the experience set a clear tone: Chef Noi is playing confidently and the results are compelling.

Tapas bar

Oyster Selection with Condiments (150 THB/piece)
A bright, briny overture, impeccably fresh and stripped of any unnecessary embellishment. It functions almost like a palate reset, a quiet promise of what’s to come.
Tiger Prawn Open-Face Taco (399 THB)
A playful combination of textures: the crisp shell cracks, releasing creamy avocado, sweet tiger prawn and a vivid salsa that adds heat and lift. It’s the kind of bite that wins you over instantly.
At the Hand Roll Station
We then move toward the Hand Roll station, watching each piece assembled with quiet precision. These need to be eaten the moment they arrive — that crisp nori waits for no one.
Chutoro Tuna with Yuzu Zest & Homemade Teriyaki (189 THB/piece)
Plush and melting, the chutoro delivers exactly the richness you hope for. Yuzu adds a bright, citrusy jolt, followed by a glossy teriyaki depth that pulls the bite from sharp to umami-rich in a single sweep.
Spicy Beef Tartare with Truffle (159 THB/piece)
Indulgent and direct. The spice lands with intent while the truffle folds in a warm, earthy complexity. One of the most generous mouthfuls of the night.

At the Charcoal Bar
Next arrives one of the evening’s highlights:
Signature Chawanmushi with Flamed Foie Gras & Mushroom Gel (399 THB)
Silky and aromatic, it embodies Chef Noi’s instinctive balance between East and West. Despite its simplicity on paper, the dish is decadent yet feather-light — comforting, expressive, and unforgettable. A must-order.

Turmeric-Marinated Octopus (599 THB)
Tender, deeply smoky and warmed by turmeric’s subtle earthiness. A dish that lingers in memory long after the plate is cleared.

Andaman Tiger Prawn Choo Chee Curry (590 THB)
Charred perfectly, the prawns retain their sweetness while the choo chee curry brings a rich aromatic kick. Young coconut gratin and crisp zucchini spheres add gentle contrast. Familiar yet inventive, smoky yet bright — a standout.

Dessert
Bomb Alaska (350 THB)
A nostalgic flourish for anyone who grew up with this flambéed classic. As an ’80s–’90s kid, I’ve seen countless versions, but Chef Noi’s rendition eclipses them all. It’s light and beautifully balanced, with red berries that slice through the richness in a bright, tart rush. Irresistible.
The Drinks
Pix Mix – 320 THB
A lighthearted opener with gentle sweetness and aromatic lift. Approachable, playful and easy to enjoy.
Ume Mini – 350 THB
More refined, with a careful interplay of soft sweetness and delicate tartness. It lingers with quiet elegance — proof that restraint can be as compelling as intensity.
Final Thoughts
Phuket’s culinary ambition comes into clear focus at SUAY Alchemy, where each bar and counter operates as its own stage. Chef Noi has shaped a space that invites exploratio with oysters that echo the sea, charcoal-grilled prawns kissed by flame and a steady stream of dishes that surprise without losing balance. The moment you step inside, the energy draws you in; it’s difficult not to be fully absorbed by the experience. I’m already looking forward to returning and tasting my way through the rest.
