Two weeks ago, I was invited to an exclusive dinner at Amatara Welleisure™ Resort in Panwa, hosted in collaboration with Tatler Thailand. This event the Amatara Longevity Table left me pondering the ancient wisdom of Plato’s Republic and its modern-day application at the hands of Chef Nimit Kaewpoung (Iron Chef Thailand 2022).

The evening began with an aperitivo on the deck of Sun & Moon with the Andaman Sea as a background. We then moved to Scene Restaurant, beautifully adorned for the occasion.

 

As I took my seat at the long communal table, my mind flashed to Book II of Plato’s Republic, where Socrates argues that gourmet banquets and unchecked indulgence ultimately lead to a society’s downfall. Yet, where ancient philosophy feared luxury, The Amatara Longevity Table offered a refreshing, modern resolution. This exclusive collaboration with Tatler Thailand beautifully demonstrated that gastronomy doesn’t have to be a vice; when aligned with the resort’s Welleisure™ philosophy, a multi-course dinner transforms into medicine.

Each dish was plated by Chef Mit on a stage before being served, elevating the dinner into an immersive theatrical performance. There was a striking sense of reverence to his assembly, highlighting the medicine-as-art philosophy of the night. This masterclass began with a quartet of mise en bouche served together on a single plate, each bite precisely designed to be savored in a specific sequence.

Miang Kham


A crispy, digestive powerhouse! Betel leaves (traditionally used for oral health) wrapped around ginger (anti-nausea and anti-inflammatory) and cashews (heart-healthy fats). The coconut palm sugar-lime dressing added a sweet-tangy kick, making this Thai tradition a delightful bite of wellness.

Chon Khamin


A detoxifying, immunity-boosting trio! Cobia, a lean protein rich in omega-3s, met fresh turmeric (a potent anti-inflammatory) and pickled beetroot (a nitric oxide booster for heart health). The vibrant colors and bold flavors made it a perfect start to a longevity-focused feast.

Khao Yum Kai Pam


A gut-brain axis powerhouse! Wolffia (the world’s smallest flowering plant, packed with protein and lutein for eye health) met a fermented fish dressing (rich in probiotics for gut health). This botanical composition was a testament to the harmony of nature and nourishment.

Dalah Pu Dam


A collagen-boosting, antioxidant-rich delight! Andaman black crab (packed with zinc and selenium for immunity) paired with Tabtim Siam pomelo (bursting with vitamin C) and torch ginger (known for its antimicrobial properties). The crispy riceberry added a satisfying crunch, tying it all together in a synergy of immunity-boosting goodness.

The Starters

Soy-Cured Dry-Aged Red Grouper


A brain-boosting, anti-aging duo! Andaman red grouper, soy-cured and dry-aged for depth of flavor, was paired with coconut cream (healthy fats), spiced coriander (digestive aid), and caviar (rich in vitamin B12 and omega-3s). A dish that nourished the mind as much as the palate.

The Gaeng Liang Nam Tao course reimagines the classic Thai herbal soup as a structural, vertical masterpiece, featuring mantis shrimp wrapped in delicate vegetable ribbons and crowned with caviar.

Gaeng Liang Nam Tao


A healing, mineral-rich elixir hid in this traditional herbal broth. The soup brought together pumpkin (beta-carotene for glowing skin), mantis prawns (iodine for thyroid health), crab meat, zucchini, and morning glory (iron and fiber). This creamy pumpkin soup delivered a sharp and invigorating kick. It was one of my favorites of the evening.

One of the guests sitting near us shared that this dish was a nostalgic reminder of her childhood. Traditionally, it’s also known as a milk booster and is often given to new mothers, adding another layer of nourishment and cultural significance to its rich history.

Main course

Muek Nam Dam

A cellular rejuvenation plate! Squid (a low-fat, high-protein delight) was paired with pomegranate (punicalagins for cellular repair), crispy riceberry (fiber for gut health), pineapple, seaweed (iodine and thyroid support), and horseshoe crab roe (a rare, nutrient-dense delicacy). The Phuket-style chilli sauce added a fiery finish.

Phuket Lobster

The undeniable star of the evening was the Phuket Seven-Color Lobster, a local, Geographical Indication (GI) protected delicacy that doubled as a potent longevity booster. Grilled to smoky perfection, the naturally sweet lobster is packed with astaxanthin, a powerhouse antioxidant. Chef Mit paired it with a refreshing crab salad, aromatic herb oil, and fiber-rich brown rice tailored for gut health. What truly tied the plate together was a turmeric-infused sour broth and a Southern coconut curry leaf essence. The curcumin from the turmeric acted as a targeted anti-inflammatory for joint health, while the complex flavor profile beautifully honored Southern Thai heritage, a  cultural melting pot shaped by centuries of Indian, Chinese and Malaysian influences.

Dessert

Durian Fak Thong

A mood-enhancing, energy-sustaining finale! Pumpkin (vitamin A for immunity) was paired with coconut milk and house-made durian ice cream (potassium and B vitamins). Creamy, dreamy, and utterly indulgent, this dessert left everyone smiling even Jenny, a long-term expat trying durian for the first time!

Zen Matcha Chia Pudding

A stress-relieving, digestive-soothing treat! Matcha (L-theanine for calm focus) met chia seeds (omega-3s and fiber) and Marian plum (antioxidants). Topped with Phatthalung sago pearls, this dessert was as beautiful as it was beneficial.

Spiced Pineapple Noir

A bold, antioxidant-rich bite! Phuket pineapple was paired with dark chocolate, chilli, and sea salt for a sweet-spicy-savory explosion that awoke the senses.

Mango Cheesecake

A refined, raw delight! Mango (vitamin C) met cashew cream, lime, and coconut nectar in a no-bake cheesecake that was as light as it was luscious.

Wine Pairings

Each course was thoughtfully elevated with a curated wine pairing, proving that indulgence and health can beautifully coexist. The active polyphenols in the crisp white wines seamlessly complemented the omega-3 fatty acids in the seafood. Together, they formed a heart-healthy, cardiovascular power combo that had everyone raising their glasses to a long and happy life.

Final thoughts

As the evening drew to a close, I couldn’t help but reflect on how this experience serves as a blueprint for modern living. It stood as a powerful reminder that true wellness stems from absolute harmony with our food, our community and our environment.
